I have a github profile with around 4 open source scripts written in different programming languages (php, bash etc..), I have a legendary author profile on codeproject.com and I have my tech blog.
Do you think an employer would care about these if I mention them on my CV or is it more like a show off thing that nobody cares about?

It's usually a good thing to mention. Unless you're applying for a job as an open source developer, then I'd be a bit more careful.
If your employer is looking for an open source developer, she's looking for someone who has experience with mailing lists, public bug trackers, public issues, incendiary comments from stupid users, conflict management without a boss to solve it, etc etc.
Obviously in that case, putting a couple of scripts up on github doesn't qualify as "open source experience". If you're proud of the code you put up there and want to show it off, you should mention your github profile anyway, just don't necessarily label it as "open source".
If you're applying for a good ol' corporate dev position, you can call this open source, no one will care.
