Both OSes are fantastic. It's about what you prioritize. Android, as you said, is the king of customization, you can repaint the entire canvas the way you see fit. The drawback is that makes for a very fragmented OS, that needs to support thousands of SoCs and hardware - that also makes software updates a pain. iOS doesn't have this problem but the drawback is the only thing you can do to make it unique is change your wallpaper lol. I also prefer it because I have an iPad and MacBook and the integration between devices is simply amazing - literally outstanding. I do love Android as well, I just don't rely on it on the day-to-day. For example my Z Fold3 battery life is quite literally around half that of my iPhone...
