Single-channel means using just one memory stick, while dual-channel means using two sticks which increases memory bandwidth- it gives you nearly 20-30% performance boost over single-channel memory.
Gives you more bandwidth, but it wouldn't effect performance in games much as far as I know. But yeah, it's just better to have dual channel.
@MrElie, your tubes are too long, make them shorter, and PCandParts has the K version for $376. If you were gonna go non K, you could have ditched the risky water cooling and the money on the board
