offline offsite backup

i posted this on spiceworks but i am sure it can be a good exercise for us with the upcoming economy issues

i work probono for 2 small NGO in Congo , each have one domain 2008R2 server and a NAS

i currently have backup set on both nas , but i am looking for an idea to use a portable offsite backup like a flash drive or portable disc that is taken offline when not used for ransomware and safe keeping .

do you have any idea how i can setup this with the lowest cost ? i donated the portable discs but i am trying to find out a away to automatically take off the usb disc and on again just for a certain period a day

can this be done via small script per example or some app ?
