If you're talking about the visa process, there are probably specific conditions. Maybe they will ask for a contract, I don't know what they do.
I was discussing the topic from a recruiter perspective, if a company wants to hire you but check your previous employment first, with I believe would be a common thing in Canada.
When you get asked for references you can pick them, so if you don't get along with someone in your previous work you an just give the name of someone else. Or did you have a problem with everyone?
It is possible they will call and ask to talk to the boss or persons which you did not mention, but this way at least you put the chances on your side.
If you worked 3 years in a company and write that you worked 4, or if you worked 4 and write that you worked 5 there, that is cheating. I think I understand your problem but if it's only for a visa application they probably only want proof that you worked there, not necessarily that you did great work.
In any case, you will have to ask someone else, I don't know much about the visa stuff, I thought you were asking about companies wanting to employ you (because you had asked about how to find work), not about the visa application.
Maybe you can just mention the years you got at the "good" company and not mention the other one at all? That would be the safest thing to do.
Maybe someone else here has more information about how they check these things.
