You have to count at least as much as in Beirut, usually a little more. Probably even more for Paris. Some places are selective with bouncers and all. You have be careful in the part of Europe because some things are overpriced, if you don't know where and how to get them for cheap, for example the train ticket that costs 2x less when you buy it online and in advance. But anyway try to get prices which are comparable to lebanon. $70 is not bad, for a decent hotel. Careful about that, there are crappy hotels in Europe as well - it's not because it's the rich part of Europe that you won't find anything crappy or any ripoffs :) But I don't want to give you too much negative vibes :)

I have a Lycamobile sim card myself, and it costs almost the same to call Lebanon than do a local call :) (but the call quality is a low)
Usually it's easy to buy a pre-paid SIM card in europe, without down payment or monthly plan.
Quite often the SIM card is free but you have to buy some credit with it. Depending on the country you won't even need give any ID or address.

I've been to Paris as well and would not be too excited about going back - it's monotonous and expensive, among other things. Yet there are lots of cultural happenings and such things if you're into that. Anyway I think it's worth experiencing if you have some time for that. If you're into tech stuff there is also "Le Parc de la Villette" which is pretty impressive, they even have a submarine that you can visit (well they had, at least, when I went there!), but yeah it's not typically Parisian stuff. There must be some really nice restaurants around Paris, if you can find some which are good and affordable (and with nice waiters).
